A patented process, a farm steeped in history, hands shaping every piece. Patience, precision, singularity.
Most flavoured chocolates receive their aromas on the surface. At Charlemagne the approach is the reverse: natural essential oils are blended directly into the melted cocoa mass, before any moulding. This is not an applied perfume. It is a flavour built from within.
This patented process, developed by Denise Courant-Bellefroid, raised the house among the most innovative chocolate makers in the world. It is its taste signature: a very fine chocolate, long on the palate, with persistent natural aromas.
“The essential oil does not perfume the chocolate. It transforms it.”
The quality of a chocolate begins with the fat that composes it. European regulation allows up to 5% vegetable fats in chocolate. The great houses refuse this tolerance. So does Charlemagne.
Cocoa butter is what gives chocolate its clean snap, its precise melting curve at body temperature, that velvety texture nothing else can reproduce.
Down to the couvertures: the house works on its own recipes, developed within its walls.

Truffles, pralines, candied peels, squares: each category follows its protocol. But one principle runs through every line: the human hand is not bypassed. Rolling the truffles, visually checking every piece, these gestures cannot be delegated.
In an industry that optimises, the house chooses to slow down. Production remains limited. That is the price of a quality guaranteed piece after piece.
